When doing a callsign search for VY0A, details are returned including grid square JJ00aa. This location info is used by a number of logging programs to calculate beam headings, and with a lat/lon of 0/0 the calculations get badly messed up. VY0A definitely wasn't taking place from JJ00aa.

Is this just a case of someone entering erroneous data in their lat/lon fields, or is it a QRZ.com way of providing a default location when none is entered?

When nothing is entered the system goes to the default location JJ00aa.
