We have a potato thread so...

My favorites:

Fish:

Oysters... usually pan fried with bread crumbs and seasoning...or sometimes...raw/ with a beer

Calimari is great

Crab boiled and then friend in garlic (and I mean LOTS OF GARLIC) is the best. Serve with california red wine on an anniversary http://www.qrz.com/iB_html/non-cgi/emoticons/wink.gif

As for actuall fish salmon seems dry to me but I like fresh ling cod.

Poultry:

Chicken. No not the stuff that lives in a cage. I mean Free-range stuff.

Favorite way to serve this is with wipped cream/garlic all made into a broth then poured over the fired chicken.

Cream-fried-chicken. (This works on Pheasent too)

Turkey I find too dry by one in 5 years when $$ is avaible Duck is good.

Meat:

Well farm raised beef 100% natural. I prefer hamburger or beef ribs. Beef ribs should be done with good bbq sauce like 'Bull's Eye'. Hamburger should be fried in a tad of garlic, red hot and beer.

Pork i rarely eat .. I do like what we call 'crisp'. Basically softer pig skin.

Lamb. Ground like the hamberger except dont add garlic. Lamb has a a specail flavour.

When cooking out we do the corn on the cob thing and I soak those in water with the husks still on them. Then we throw them on the grill still with the husks on them. VE7NOT gave me an idea with talking about that garlic and I may add garlic flavoring to the water they soak in. Not sure how I am going to do that yet.

Okay, you asked for it. http://www.qrz.com/iB_html/non-cgi/emoticons/tounge.gif #Here's a little thing I just call "trash cuisine" or "trashing it up." #It starts with El Monterey frozen beef-and-bean chimichangas [apparently, something like a burrito, but fried after wrapping?]. #Microwave 'em halfway, turn 'em over, drizzle with Tabasco, and cook 'em just about the rest of the way. #Top with shredded cheese, and put 'em back in the microwave until the cheese is melted. #Cool to whatever temperature is comfortable to you ["Caution: Filling is hot!"], top with sour cream, grab a fork, and dig in.

Roast Prime Ribs of Beef

Serves: 6 Nebraskans, 12 Iowans, 24 Arizonans, 48 Californians or 1 Texan. http://www.qrz.com/iB_html/non-cgi/emoticons/biggrin.gif

12 Lb Prime Rib roast, at room temperature
Salt and freshly ground pepper, to taste #

Preheat oven to 425 Degrees F.

Season roast with salt and pepper. In a roasting pan place roast, fat side up, so that ribs of roast act as
rack. Roast for 30 minutes and reduce heat to 350 Degrees F. Continue to roast for 2 hours more or until meat thermometer registers desired doneness. #Transfer to platter and let rest, covered, for 20 minutes.

For the pan sauce:

2 cups beef stock or canned broth
Sprig of thyme or ½ tsp dried
Worcestershire sauce, to taste
Salt and freshly ground pepper, to taste #


Skim off fat from pan drippings and add stock and thyme. Bring to a boil and simmer 10 minutes. Season
with Worcestershire and salt and pepper to taste. #Transfer to a sauceboat.

Serve with Horseradish, a baked potato and a tossed salad.

Mountain Oysters? I'm Nuts for them! Every time I eat them I have a ball! Batter dipped and deep fried or simmered all day in the crock-pot with Campbell's Golden Mushroom soup...Mountain Oyster Tempura is pretty good as well.

Be sure to get lots of fresh horseradish for the meal.

Turkey fries are much better then rocky mountain oysters. Dipped in beer batter and fried in butter just like morel mushrooms and you have some good stuff, Maynard. http://www.qrz.com/iB_html/non-cgi/emoticons/smile.gif

Your definition leaves out pig testicles, which are called mountain oysters where I came from in eastern Iowa. Beef testicle were called calf fries. There is a huge Testicle Festival in a little town just east of here. It got so big it had to be moved to the county seat and as far as I know is still held there. Last I heard they served over 4000 people, it might be more by now. Far as I know they serve 4 "flavors" of testicles, beer, pig, lamb and hog. Good stuff.
