Ah the good old days. Here is some rare archival footage of how HAM's should act (Although even then they had to deal with a LID from Italy).

...possum grilled over an old wire mesh satellite dish ( wash off the rust off the dish first ), cooked over an open flame, cooked to perfection, then cut into small bits ( like bar b - q ) and devour the tasty mess !!
Of course your version of " perfection " may differ from some one elses version, so....just do your best ( trial & error ).
worst case scenerio, have some venison ( deer meat ) nearby in case you ruin the possum attempt. ...or steak / chicken / pizza / etc.
Just because you cant cook possum dont mean you cant cook something else, so dont feel bad if you cant.

HAM should be served with EGGS and maybe with GRITS. And I learned long ago, that coffee gravy is really neat over HAM and GRITS.

Ham garnished with pineapple slices held in place with cherries on toothpicks, covered in brown sugar/mustard and beer glaze with cheezy scalloped potatoes on the side.
Fried ham and eggs with the leftovers for breakfast and ham and cheese sandwiches for lunch.
Ummmmmmmmmm!
